Cacio e Pepe Meatballs

Ingredients

Ground turkey or chicken
1 lb.
Eggs

Garlic powder
1 tbsp.
Breadcrumbs of choice
1 cup
Ricotta cheese (or dairy-free substitute), cubed
2 tbsp.
Parmesan (or dairy-free substitute)
1/2 cup
Olive oil for drizzling
2 tbsp.
Cracked black pepper
Water
1 tbsp.
Salt
1/8 tsp.
Black pepper
1/8 tsp.
Crumbled feta cheese, divided
3 tbsp.

 

Directions

  1. MIX ground chicken, eggs, garlic powder, breadcrumbs, and ricotta.
  2. FORM mixture into balls, stuffing each with a mozzarella cube.
  3. ADD to an oven-safe skillet and BAKE meatballs at 350-degrees for 30-40 minutes or until cooked through.
  4. TOP with Parmesan, olive oil, and cracked black pepper.
  5. SERVE and ENJOY!
