Cajun Herb Egg Salad

Ingredients

Large hard-boiled eggs, cooled and peeled

Reduced-fat mayonnaise
1/2 cup
Yellow mustard
1 tbsp
Chopped green onions
2 tbsp
Fresh oregano, minced
1 tsp
Fresh thyme, minced
1 tsp
Cajun seasoning
2 tsp
Sugar
1/2 tsp
Romaine lettuce leaves
8-10 leaves
Salt & black pepper
to taste

 

Directions

  1. Roughly CHOP the hard-boiled eggs and TRANSFER to a large bowl.
  2. ADD mayonnaise, mustard, green onions, oregano, thyme, Cajun seasoning, and sugar to the bowl, and STIR until evenly combined. SEASON with salt and pepper to taste, and REFRIGERATE until ready to serve.
  3. When ready to serve, SCOOP egg salad onto romaine leaves. ENJOY!
