Caprese Egg Toast

Ingredients

Sourdough loaf
14 ounce
Butter
2 tbsp
Cooking oil
1 tbsp
Eggs

Small avocados, halved

Cherry tomatoes, sliced

Mozzarella cheese
2 2-inch slices
Fresh basil leaves
1/3 cup
Balsamic vinegar
2 tbsp

 

Directions

  1. PREHEAT oven to 400°F. LINE a baking tray with parchment paper.
  2. SLICE bread in half lengthwise, then SLICE those pieces in half, making 4 pieces. REMOVE some of the coat to make room for ingredients. Evenly COAT the cut sides with butter. ARRANGE slices on the prepared baking sheet and BAKE for 10-12 minutes.
  3. While the bread toasts, MAKE fried eggs: HEAT oil in a frying pan over medium heat. CRACK eggs in the pan, one at a time, and FRY to your liking. SET ASIDE and KEEP WARM.
  4. MASH a half avocado on each bread slice, TOP with slices of cherry tomatoes, mozzarella cheese each, a fried egg, and basil leaves. DRIZZLE with balsamic vinegar and SERVE.
