Coconut Pie

Ingredients

Granulated Sugar
1 cup
Flour
1 tbsp.
Butter, melted
1 stick
Large eggs
3
Evaporated milk
1 cup
Vanilla extract
1 tbsp.
Shredded coconut
1 1/2 cups
9-inch pie crust

Directions

  1. PREHEAT oven to 350° F.
  2. To a large mixing bowl, ADD sugar, flour, and melted butter.
  3. ADD in three cracked eggs and WHISK with a hand mixer.
  4. ADD in the evaporated milk and vanilla extract, whisking to combine.
  5. FOLD in 1 cup of shredded coconut
  6. POUR mixture into a premade pie crust. SPRINKLE remaining ½ cup of shredded coconut on top.
  7. BAKE for 45 minutes or until golden brown. SERVE warm.
