Directions
- PREHEAT oven to 350° F.
- To a large mixing bowl, ADD sugar, flour, and melted butter.
- ADD in three cracked eggs and WHISK with a hand mixer.
- ADD in the evaporated milk and vanilla extract, whisking to combine.
- FOLD in 1 cup of shredded coconut
- POUR mixture into a premade pie crust. SPRINKLE remaining ½ cup of shredded coconut on top.
- BAKE for 45 minutes or until golden brown. SERVE warm.
