Directions
- PLACE eggs, celery, green chiles, red onion, mustard and mayonnaise in a large bowl. SEASON with salt and pepper, and gently STIR until well incorporated. FILL each slider bun with 1/2 cup egg salad. SERVE.
Insider Tips
- For a speedy dinner, use sweet Hawaiian rolls. Don’t separate when removed from package. Lay flat on a platter, spread egg mixture across, and place the top layer of rolls. Pass around and have everyone pull apart.
- This recipe is an excellent source of protein and choline.
