Green Chile Egg Salad Sliders

Ingredients

Large eggs, hard-boiled, peeled, and chopped

Celery stalks, finely chopped
1/2 cup (2 stalks)
Diced green chiles
1 4 oz. can
Red onion, finely chopped
1/4 cup
Dijon mustard
1 tbsp.
Mayonnaise
1 tbsp.
Salt
1 tsp.
Black pepper
1 tsp.
Slider buns

Directions

  1. PLACE eggs, celery, green chiles, red onion, mustard and mayonnaise in a large bowl. SEASON with salt and pepper, and gently STIR until well incorporated. FILL each slider bun with 1/2 cup egg salad. SERVE.

 


Insider Tips

  • For a speedy dinner, use sweet Hawaiian rolls. Don’t separate when removed from package. Lay flat on a platter, spread egg mixture across, and place the top layer of rolls. Pass around and have everyone pull apart.
  • This recipe is an excellent source of protein and choline.
