Ingredients

Strawberry Mixture

Granulated sugar

Strawberries, chopped

Heavy whipping cream

Whole milk

Directions

Strawberry Mixture

  1. COMBINE sugar, strawberries, and lemon juice in a medium saucepan over medium heat. COOK for 12 minutes, stirring every 2 minutes, until the strawberries are soft and the mixture resembles jam. REMOVE from heat and SET ASIDE to cool.

Sweet Vanilla Cream

  1. COMBINE heavy whipping cream, milk, sugar, and salt in a medium saucepan over medium heat. STIR with a wooden spoon until sugar dissolves. REMOVE from heat.
  2. BEAT yolks in a medium bowl. ADD ½ cup of the cream mixture to the yolks and STIR until well combined. ADD the yolk/cream mixture to a saucepan with the rest of the cream mixture and HEAT over medium-low heat until the temperature reaches 170°F and the mixture thickens or coats the back of a spoon. RUN through a metal strainer into a separate bowl. LET COOL.
  3. DIVIDE the sweet vanilla cream and strawberry mixture into 10 popsicle molds. Using a small spoon or skewer, gently STIR the mixtures in each mold to create swirls. COVER, INSERT popsicle sticks, and FREEZE at least 4 hours or until firm.
