Directions
- In a skillet, BROWN the chorizo, then DRAIN any excess grease.
- CRACK 6-8 eggs into a large bowl and WHISK. SEASON with salt and pepper.
- In a separate skillet, MELT 1-2 Tbsp of butter at medium-high heat.
- ADD eggs to the skillet and STIR slowly until they become scrambled.
- GRATE fresh mozzarella cheese into a separate bowl.
- To assemble your quesadillas, ADD a thin layer of mozzarella cheese to 1/2 of a large tortilla.
- Next, ADD a layer of cooked chorizo and chopped green onion. Finally, ADD another thin layer of cheese.
- FOLD the tortilla in half and FRY in a skillet on medium heat until golden brown.
- FLIP and REPEAT on the other side.
- SERVE with fresh pico de gallo and guacamole!
