Chorizo Quesadillas

Ingredients

Chorizo
1 package
Large eggs
6-8
Salt & pepper
Butter
1-2 tbsp
Mozzarella cheese, grated
8oz. block
Large tortillas
Green onion
Pico de gallo
Guacamole

 

Directions

  1. In a skillet, BROWN the chorizo, then DRAIN any excess grease.
  2. CRACK 6-8 eggs into a large bowl and WHISK. SEASON with salt and pepper.
  3. In a separate skillet, MELT 1-2 Tbsp of butter at medium-high heat.
  4. ADD eggs to the skillet and STIR slowly until they become scrambled.
  5. GRATE fresh mozzarella cheese into a separate bowl.
  6. To assemble your quesadillas, ADD a thin layer of mozzarella cheese to 1/2 of a large tortilla.
  7. Next, ADD a layer of cooked chorizo and chopped green onion. Finally, ADD another thin layer of cheese.
  8. FOLD the tortilla in half and FRY in a skillet on medium heat until golden brown.
  9. FLIP and REPEAT on the other side.
  10. SERVE with fresh pico de gallo and guacamole!
