Ingredients

Baking soda
1 tsp
Large eggs

Mayonnaise
1/4 cup
Dijon mustard
2 tbsp
Hot sauce
2 tsp
Pickle juice
2 tsp
Salt
To taste
Paprika
A pinch
Pre-cooked pulled pork
1/4 cup
Pickled cabbage & chives
To garnish

 

Directions

  1. FILL 1/3 of a saucepot full of water and BRING to a boil. ADD the baking soda and eggs, allowing them to boil for ~13-15 minutes. After that time, REMOVE the eggs and DROP them in an ice bath for 5 minutes (the baking powder and ice bath will make peeling the eggs significantly easier).
  2. PEEL the eggs and SLICE each in half lengthwise. SCOOP OUT the yolk and ADD to a bowl with the mayonnaise, Dijon mustard, hot sauce, pickle juice, and salt, mixing until well combined.
  3. SCOOP the mixture into a plastic bag and CUT OFF a corner. SQUEEZE the yolk mixture into each boiled egg half and SPRINKLE with paprika.
  4. TOP with pulled pork, pickled cabbage, and chives. SERVE and ENJOY!
