Egg Bites With Hidden Greens

Ingredients

Bell pepper, diced
1/2
Green onions, chopped
2-3
Greens (like spinach and kale), finely chopped
1/4 cup
Large eggs
8
Milk
1/4 cup
Cottage cheese
1/2 cup
Shredded white cheddar cheese
1/4 cup
Shredded Monterey Jack cheese
1/4 cup
Shredded Parmesan cheese
2 tbsp
Salt & pepper to taste

 

Directions

  1. DICE the bell pepper.
  2. Finely CHOP the green onions and greens.
  3. CRACK eggs into a bowl.
  4. MIX all ingredients in a large bowl, then ADD the eggs. STIR to combine.
  5. SPRAY muffin tins with oil and POUR mixture into muffin tins.
  6. BAKE at 350° in the oven in a water bath for 22-25 minutes.
