| Tortillas, pico de gallo, shredded cheese, and cilantro for serving |
Directions
- PREHEAT oven to 400° F.
- DICE all veggies and SET ASIDE.
- LINE a baking sheet with foil and evenly SPREAD bacon.
- TOP bacon with diced veggies and diced chicken apple sausage, and then SEASON with salt and pepper.
- PLACE in oven and bake for 10 minutes. REMOVE and STIR.
- PLACE back in oven and BAKE for another 10 minutes. REMOVE and STIR again.
- PLACE back in oven and BAKE for 5 minutes.
- REMOVE from the oven. MAKE holes in between the veggies, meat, and bacon mixture, and CRACK the eggs into the holes.
- BAKE for another 10-12 minutes until eggs are fully cooked to 165° F.
- SERVE with tortillas, pico de gallo, shredded cheese, and cilantro!
