Pea Fritters

Ingredients

Frozen peas
4 cups
Large eggs
4
All-purpose flour or whole wheat flour
1 1/4 cup
Baking powder
1 tsp.
Avocado oil or coconut oil
3 tbsp
2% plain Greek yogurt
1 cup
Garlic powder
1/4 tsp
Onion powder
1/4 tsp
Dried thyme
1 tsp
Poached eggs, for adults
if desired

 

Directions

  1. PLACE peas in a microwave-safe bowl. COVER with enough water to submerge peas and MICROWAVE 1 minute, until tender. DRAIN water.
  2. PLACE peas, eggs, flour, and baking powder in a blender. BLEND until combined.
  3. In a medium skillet, ADD oil. Once warmed, DROP about 1 tablespoon of pea mixture into the skillet at a time. COOK 2-3 minutes on each side, until golden.
  4. In a small bowl, COMBINE yogurt, garlic powder, onion powder, and thyme.
  5. SERVE pea fritters with Greek yogurt mixture. For adults, TOP fritters with a poached egg, if desired.
  6. REFRIGERATE leftovers up to 3 days.
