Ingredients

Ripe plantain

Frying oil
Large eggs

Beef picadillo
1 cup
Shredded cheddar cheese

Directions

  1. PEEL plantain and SLICE thinly lengthwise to create 6 long plantain slices.
  2. HEAT frying oil in a pan over low to medium heat and ADD the plantain slices to the pan. COOK until golden brown, then DRAIN on a paper towel-lined plate.
  3. In a separate bowl, WHISK 2 eggs and SET ASIDE.
  4. Using a muffin tin, ROLL the plantain slices around the muffin tins to create a cup shape.
  5. ADD a layer of beef picadillo, then a layer of cheese, then POUR the egg mixture over each cup, then another layer of beef picadillo, and finally another layer of cheese.
  6. BAKE in the oven at 350°F for 10 minutes.
  7. REMOVE from oven and LET COOL completely before removing from baking pan and enjoying!
