Ingredients

Hard-boiled eggs
3
Fresh watercress, chopped
1 cup
Mayonnaise
1/2 cup
English or Dijion mustard
1 tbsp
Salt
1/4 tsp
Black pepper
a pinch
Thin whole wheat sandwich bread
8 slices

 

Directions

  1. PEEL and CHOP hard-boiled eggs.
  2. In a large mixing bowl, COMBINE chopped eggs, watercress, mayonnaise, mustard, salt, and pepper. STIR until well combined.
  3. SPREAD egg mixture over 4 bread slices. CAP with the remaining bread slices. TRIM the crusts and SLICE the sandwich in half diagonally. SERVE.
