Directions
- In a large skillet over medium-high heat, ADD oil. Once hot, ADD pork and COOK, breaking it into small pieces until no longer pink and it reaches 160°F. ADD onions and COOK until softened, about 2-3 minutes.
- ADD rice, peas and carrots, soy sauce, oyster sauce, and sesame oil, and STIR to combine. COOK, stirring occasionally, for 3-5 minutes until rice and vegetables are warmed through.
- PUSH rice mixture to one side of the skillet. CRACK eggs into the cleared-out side of the pan and scramble to cook through before mixing into the fried rice. Once all ingredients are fully incorporated, REMOVE from heat.
- SERVE hot, garnished with scallions if desired.
