Ingredients

Eggs

Grated cheese
1/2 cup
Diced onion
1
Bell peppers (2 whole, 1 finely diced)

Salt and pepper
A pinch
Slices of ham (chopped or left as slices)
2-3
Chopped chives for garnish
to taste

 

Directions

  1. In a pan, SAUTÉ the diced peppers, diced onions, and ham (if chopped).
  2. PREPARE the eggs by whisking them in a bowl. Next, ADD the sauté mixture and cheese to create the egg mixture. SEASON with salt and pepper.
  3. SLICE the top off the two additional peppers. Use a spoon to SCOOP the inside seeds and stems out. LAY a slice of ham in each of the peppers (if not already chopped and added to the mixture). Then, FILL the peppers with the egg mixture. PLACE in an air fryer at 400°F for 8 minutes or in an oven at the same temperature for 10 minutes.
  4. GARNISH with chopped chives, if desired. SERVE and ENJOY.
